What determines the quality of cognac
Primarily from raw materials. For a good distillate, you need acidic and weak, with a low alcohol content (7-9%), aromatic wines. These are the ones obtained from the white grapes of Ugni Blanc, grown on the fertile limestone soils of the Charente in a mild maritime climate. There is simply no other place like this on the planet.
The second component of quality is absolutely pure natural white wines for distillation. Manufacturers are prohibited from adding sugar, sulfur dioxide, and other additives that may affect the quality of alcohols.
Thirdly, for the production of cognac, only double distillation in special distillation stills of the Charente type is allowed. Continuous distillation (as in the production of Armagnac) is prohibited. Double distillation allows for better purification of alcohols from impurities and fusel oils. The output is a completely transparent liquid with a concentrated fruity aroma and an alcohol content of 68–72%.
An indispensable stage in the manufacture of cognac is aging in oak barrels. Time and wood change color, density of the drink, affect its taste, add new aromas, but the quality does not depend on it. Bad spirits in a cask won't get better, no matter how old they are.
